/ Mountain Foal from Ripolles
In the Ripollès more than 50 mare breeders have joined to form the association of breeders of mountain mares from Ripolles. Their foals are raised in extensiver, they spend the summer in the high mountain and at winter they go down to the valley. At autumn, when the herds come down from the mountains, the foals begins the fattening stage, which is done in natural way based on cereals and fodder without additives or medicines.
They are slaughtered around a year of life and very good quality of meat is obtained by its tenderness and characteristics. Foal meat is a healthy, nutritious food with special characteristics that differentiate it from other meats. It is very tender and a little sweet, has few fats and a lot of iron.
The breeding of these foals contributes to keep the Catalan Pyrenean horse breed. This comes from the cross between native mares from Pyrenean regions and the great horses of meat that offered the military stops during century XX. The rough census is about 5000 animals. It is an equine breed located in seven regions of Pyrenees and Pre-Pyrenees, mainly destined to the production of meat and, secondarily, to tourist activities.
