/ Cold Meat and sausages made with pigs from Ripollès
Ripollès sausages (cold meat), of a high quality, are still elaborated following traditions of previous generations. These sausages are unique for their artisanal curing. You will find a wide variety in any of meat workshops of our territory: white sausage, black sausage, egg sausage, boiled sausage, butifarra of liver, "bufes", bulls, spicy pork sausage, cured meat, confit of pork, mixed cold meats, hams and bacon.
At Ripollès, a group of butchers and charcuters make “llangonisseta” and “mbotits” from Ripollès.The "llangonisseta" is a sausage that is made with lean meat and various fresh pork bacon that is crushed in the chopper and mixed by adding the spices. Then is stuffed the skin of the pig intestine with it, cut and tied by its ends with a yellow, green and white string. All the meat used for its elaboration comes from pigs born, raised and fattened in the Ripolles region.
